Did You Know?

It's important to consider the brand of barbecue sauce you buy. Choosing a brand with lower levels of sugar and salt, and paying attention to serving size, will help you make healthy choices without sacrificing delicious taste!

1. Prepare

  • Preheat oven to 400 degrees F.
  • Drain and rinse black beans and corn in colander.
  • Drain tomatoes.
  • Mix beans, corn and tomatoes in medium bowl. Divide mixture in half.

2. Divide Ingredients

  • If cooking two pizzas, remove both pizza crusts from package then proceed with recipe, repeating each step for both pizzas.
  • If saving second pizza for another day, remove one pizza from package and see instructions below to freeze leftover ingredients until you're ready to use them!

3. Assemble the Pizza

  • Place pizza crust on baking sheet.
  • Spread 1/4 c. barbeque sauce evenly over crust.
  • Spoon half of bean-corn-tomato mixture onto crust.
  • Sprinkle 1 cup mozzarella evenly over pizza.

4. Bake the Pizza

  • Put pizza in oven and bake 8-10 minutes or until cheese is melted and edges of crust are lightly browned.
  • Remove from oven.

5. Put It All Together

  • Cut the pizza into 8 slices.
  • Place two slices on each plate and enjoy!

From our Kitchen!

This recipe gives you a lot of bang for your buck. You get to choose whether you want to make 2 pizzas today, or save ingredients for another time. If you choose to freeze half of the ingredients for later, seal the bean, corn and tomato mixture tightly in a plastic container, and seal the remaining pizza crust back into its packaging before placing in the freezer.
