This unique pizza, made with whole wheat pizza crust, is packed with healthy carbohydrates and protein. The ingredients are enough for two pizzas, which means you can make two and have leftovers for tomorrow, or you can save the ingredients to cook later.   • 1 can diced tomatoes, no salt added (15 ounce)
  • 1 can black beans (15 ounce)
  • 1 can corn (15 ounce)
  • 1/2 cup plain barbecue sauce
  • 2 cups shredded mozzarella
  • 2 whole wheat pizza crusts

1. Prepare.

  • Preheat oven to 400 degrees F.
  • Drain and rinse black beans and corn in colander.
  • Drain tomatoes.
  • Mix beans, corn and tomatoes in medium bowl. Divide mixture in half.

2. Divide ingredients.

  • If cooking two pizzas, remove both pizza crusts from package then proceed with recipe, repeating each step for both pizzas.
  • If saving second pizza for another day, remove one pizza from package and see instructions below to freeze leftover ingredients until you're ready to use them.

3. Assemble the pizza.

  • Place pizza crust on baking sheet.
  • Spread 1/4 c. barbecue sauce evenly over crust.
  • Spoon half of bean-corn-tomato mixture onto crust.
  • Sprinkle 1 cup mozzarella evenly over pizza.

4. Bake the pizza.

  • Put pizza in oven and bake 8-10 minutes or until cheese is melted and edges of crust are lightly browned.
  • Remove from oven.

5. Put it all together.

  • Cut the pizza into 8 slices.
  • Place two slices on each plate and enjoy!

Tip from our kitchen.

This recipe gives you a lot of bang for your buck. You get to choose whether you want to make 2 pizzas today, or save ingredients for another time. If you choose to freeze half of the ingredients for later, seal the bean, corn, and tomato mixture tightly in a plastic container, and seal the remaining pizza crust back into its packaging before placing in the freezer.
